Panini Paradise

To be honest I’d never had a panini sandwich until recently, but fortunately for me, we were gifted with a Panini maker which has put me firmly on the bandwagon. I don’t know if I’m the last one to discover these great tasting sandwiches, but just in case there are some people out there who’d like to give them a try here’s the recipe that we’ve been using. I think it came from the Weight Watchers website. It’s quite tasty, and considering the recipe’s source it must not be too bad for your waist line either.

1 tomato
1 1/2 tsp red wine vinegar
1/2 tsp olive oil
1/4 tsp dried oregano
1/8 tsp table salt
1/8 tsp pepper
Italian bread (Went with garlic sourdough last time, and it was quite excellent)
mozzarella cheese, thinly sliced
1 clove of garlic
1 cup arugula or basil leaves
Instructions
  1. preheat panini pan to medium high heat
  2. in cup, stir vinegar, oil, oregano, salt and pepper
  3. brush mixture on each slice of bread
  4. layer 1/4 cheese, sliced tomato, and arugula or basil leaves
  5. add layered sandwich to panini pan and cook until golden brown. You will need to flip the sandwich half way through to toast both sides.
  6. Repeat until stomach cannot take any more.

Summer is Finally Here

We’ve been anticipating the arrival of summer for some time now, and it seems that it’s finally showing itself. Why not celebrate with a little BBQ you ask? What a great idea! That’s exactly what we did last Saturday evening. Hannah had a tea party at Sue’s in the afternoon and we BBQ’d later that day. I saw limes at Costco earlier that day, so fresh squeezed Margaritas were the signature drink for the night.

Joe worked the barbecue while the rest of us worked on critiquing his technique. I think he got it mostly right, because by the end of the night all of the chicken was gone, and it looked like Kurt had put on a little weight.

No Putter Left Behind

Hannah and I recently signed up for a putt putt golf league. Unfortunately, we weren’t able to participate in week 1, but we made a strong showing in week 2. We actually ended up with the two best scores on our team. Although, I should probably note that it’s not exactly filled with ringers since the team found itself in last place after the first week. Nevertheless, the key to our relative success was probably using our own putters. The rest of the team thought it was a little strange, but you can’t argue with success right? We’ll see what next week brings. Oh yeah, I should mention that there are sometimes theme nights to these competitions, and as fate would have it, next Wednesday happens to be mustache night. Maybe it’s time for the ‘stache to make a comeback. I figure I can easily drop 4 or 5 strokes by sporting a power ‘stache. Hannah’s not so sure.
